90% Heirloom Apples, 10% Chardonnay. Columbia Gorge AVA. We looked to the aged apple trees planted for cider production on old homesteads in our neighborhood. By revisiting these untended survivors of a previous era, we strove to make a cider similar to those made a century ago. Basket Pressed and made by méthode champanoise in bottle; fine bubbles and original sediment remain. Aromas and flavors of baking spices, savory flavors, and ginger, with a touch of Chardonnay to bring levity to the palate.
